photoprism: probe health every 5s so startup is detected promptly (#3183) (#3188)

With --interval=5m, Docker only probes every 5s during the 30s start
period; if PhotoPrism opens its port after that window, the first
successful probe comes 5 minutes later and Supervisor times out after
120s. The 5m interval was chosen for the old 'photoprism status' check;
the curl check is cheap, so use the repo-standard 5s/25s values.
