fix(letta_code): build from the published :latest image so builds stop failing on missing upstream tags (#3173)

* fix(letta_code): track the published :latest image instead of GitHub releases

Upstream tags GitHub releases whose container image is never pushed
(0.34.23, 0.34.24), so the updater bumped to versions that do not exist
on ghcr.io and every build failed at FROM with 'not found'. Use the
existing container source on ghcr.io/letta-ai/letta-code:latest, which
reads the version from the image label: only versions whose image is
actually published can be selected.

Pinning FROM to the updater's version still fails whenever the label
and tag disagree, and a digest-only move of :latest would bump the
add-on while rebuilding the old tag. Build FROM $BUILD_FROM (build.json
already points at :latest), as immich does with the container source.
